On August 14, 2023, The Gambia’s Chef Saikou Bojang led his crew to win the 2023 ‘Best Jollof’ competition at the West Africa Food Festival in Lagos.
While fans are still reeling from The Gambia’s win, here are five easy steps to making ‘the best’ jollof rice for your family this weekend.
What You Need
One large pot
Cutting board
Sharp knife.
Jollof Ingredients Needed
4 cups rice
2 lb fish (cleaned and cut in halves)
2 cups vegetable oil
6 cups warm water
1 medium tomato, chopped
2 large onions, chopped
1 small cabbage, chopped
2 medium carrots, chopped
2 Bay leaves
Seasoning
Tomato paste
(1) In one large pot, heat your vegetable oil and fry both sides of your fish until golden brown then remove and set aside.
(2) Add your chopped onions, tomatoes, and tomato paste and gently stir until brown.
(3) Pour warm water into your pot, and add chopped cabbage, carrots, bay leaves, and seasonings. Cook this on low heat for 20 minutes.
(4)Remove fried veggies, pour your rice, and continuously stir for a few minutes.
(5) Reduce heat, cover the pot, and allow simmer for 10 minutes until the rice is cooked. Add boiled veggies once served.
